Candied Pineapple and Pecans over Vanilla Ice Cream

This is my mama’s favourite! She always makes this for the kids…its her specialty! Its so easy to make…and turns simple vanilla ice cream to an amazing and impressive dessert!

Candied Pineapple and Pecans

 

What you will need for easy homemade vanilla ice cream:

  • 2 cups cream
  • 3/4 cup 3.25% milk
  •  Pinch of salt
  • 1/2 vanilla bean or 1tsp vanilla extract or 1 pouch of vanilla sugar
  • 3/4 cup sugar

Cut the vanilla bean in half, and slit the one half with a butter knife scrape the inside and add to the cream along with the pod. Combine heavy cream, milk, sugar, salt, vanilla till well blended. Cover and refrigerate for 2 hours.

Follow instructions on your ice cream maker for making ice cream. For mine I have to have the bowl frozen for 24 hours, before using.

Takes about 20 minute of turning,before it forms into ice cream. Remove from bowl and transfer to freezer safe container. Freeze for 1 to 2 hours before serving.

For Pineapple and Pecans:

  • 1 pineapple
  • 1/2 cup pecans
  • 1 tbsp butter
  • 2 tbsp of brown sugar
  • touch of cinnamon if desired

Peel and cut pineapple, use as much of it as you need. Cut into bite-size chunks. In a pan melt the butter on medium heat, add the pineapple and cook till heated. Add the brown sugar and pecans. Liquid will start to thicken up like candy.

You may add more sugar to desired sweetness, and you may add a touch of cinnamon if desired.

Top hot pineapple and pecans over the ice cream and enjoy:)
