Omelette anyone? Super easy and yummy! You add more to it than I did, my son likes it just like this! Garlic and parsley is great too!
The ingredient of the day today is….rice flour!
I surprised my mom tonight with her favourite fried plantains. She learned how to make them from one of my Aunts who happens to be from the Philippines, since it was a surprise I couldn’t ask her for the recipe, so I came up with one on my own!
I experimented with flour and rice flour, I found the ones I made with flour were heavy and took longer to cook. Good thing I only made 4! The rest I made with rice flour, they fried quickly and with very little oil.
I also added a tbsp of Tropical fruit dip mix by Epicure, I just thought instead of sugar I would add some flavour along with sugar. Obviously you don’t have to use it I did as I have it on hand.
My sons dinner request tonight…lamb stew! The whole family loves this dish, especially when prepared this way…if you don’t have a cooking clay pot you can use a dutch pot, or something that is thick and heavy duty. You may also use a Crock pot, all you have to do is prepare it the same way, then add ingredients to the pot, add some water set it and leave it!:)
First I sauté the peppers and meat, too seal in the flavours then transfer to the oven.
