I call this chicken semi- fried as I don’t fry it the whole way through. I love the taste of fried chicken….but fried greasy food does not sit well in my tummy. The way I prepare it, the oil is not being soaked up by the chicken, I use just enough oil to lightly brown the skin.
I simply brown the skin so it gets crispy and fried like texture while its baking.
So here goes to make my semi- fried chicken!

Missing the summer days, the taste of summer sweet berries….that was my inspiration for this raspberry frozen yogurt, little cakes filled with my homemade raspberry jam that I made last summer…. brought back the taste I have been craving!
I made a yellow cake from The Cake Bible by Rose Levy Beranbaum, this is the third time trying this recipe and finally it worked out better than the other two times I made it!
Lamingtons are vanilla cakes that are cut into little squares, and have a jam filling covered in chocolate frosting then covered in coconut….sounds easy right? Well maybe for some, as for me I found them to be a challenge….maybe because I never made individual cakes. I should have cut them smaller….and maybe add them to the freezer for a bit to make it easier to work with.
Well they taste amazing, and looked good if you didn’t know what a Lamington is supposed to look like!
My kids asked for some cupcakes, and my hubby wanted some fresh juice….I had some egg yolks and some clementine juice that I made with my juicer….what to do with the egg yolks? I knew if I put them in the fridge I would forget about it, so I came up with this custard!
When my son tasted it he asked ‘what did you put in this? It tastes orange-y! He really liked it, in fact he wolfed down that bowl pretty fast!
It’s simple to make and really yummy to eat….perfect for an anytime dessert!
Nothing tastes better than homemade….that includes homemade ice cream! Making homemade ice cream takes time and preparation! Note to self: Plan ahead!
One of the issues I am having is the ingredient that I am trying to avoid….. its in all the creams! Carrageenan, is found in creams, ice creams, frozen yogurt and well you get the point.
I had to come up with a recipe that would work….texture wise, as I was becoming discouraged after a couple failed attempts! Finally it struck me, gelatin! The gelatin will help form the ice cream and thicken it! I was so incredibly happy that my experiment worked out and tasted great too!

My kids love fruit punch, and for years I have been giving them fruit punch that gave them a sugar high, rather than a natural healthy one that gives energy from natural juice.
Getting the kids to like homemade juice on the other hand was a challenge, they are so use the store bought….. they were sold when I made them this! Whoo hooo I was so happy that after all that effort they loved it!
