Strawberry Cheese Swirls

I had about a cup worth of strawberries left from the season, I did make a cobbler last night with strawberries and rhubarb and what was left of the strawberries I decided to bake something instead of freezing the rest! I did get to make some freezer jam with the other quarts of strawberries and that is what I used in these swirls, that is why the jam is noticeably fresh and bright!

I had hoped to make these with ricotta but didn’t have any and was not leaving the house in this weather! I did have Philadelphia cream cheese and so I thought it work and I was right, it did work and tasted great! My mom and daughter Sara went crazy over them! Trust me when I say these two are the pickiest people around! It was a great compliment to me that they enjoyed it so much!

Strawberry Rhubarb Pie

My dad’s favourite pie is rhubarb pie! However he does not like strawberries mixed in with it! Well maybe after this pie he might just change his mind! I had 4 cups of cut of rhubarb, which I thought would be enough but the pan I used I guess was deep and it just didn’t look like enough filling….I had some strawberries and as much as my dad doesn’t like them….I had no choice! I sliced them strawberries up and mixed them in with the rhubarb!

I was worried that it would be too watery, I never baked anything strawberry…to my surprise it wasn’t bad at all, it turned out great! In fact last time I made rhubarb it was more messy than this one!

Watermelon Fruit Punch

Its summer time! So much fruit to choose from to enjoy and cool off with on a hot summers day! I love to make juice for my kids, and they sure love when I come up with new drinks! I was inspired with what I had in the kitchen, I had half a watermelon in the fridge, some left over cherries and my mom had got me some limes, I thought it would make for a good drink and I was right!

The other drink is made of oranges and strawberries, my strawberries weren’t as pretty as they were the day before so they were perfect for juice making! I had some oranges in the fridge that no one was touching so I decided to make 2 kinds of juices!

Fried Zucchini with Honey

Fried Zucchini with Honey

When I was a kid my Aunt Angela would make fried zucchini and my cousins and I would eat it with honey! It tasted great! I still love it with honey! I make it every summer with the zucchini from my garden, reason being is I love the ones that have grown to be really big, it makes nice large circles, you can’t find them in the grocery store! Plus homegrown veggies just taste so much better!

Chocolate Ice Cream

Ok so between chocolate and strawberry I will have to say chocolate is my 1st favourite ice cream! When I was a kid  my mom would take me to the mall and she would always get me ice cream from Laura Secord. I would pick out strawberry most times…it was amazing! Tried it most recently and well it sure does not taste the same as it used too! Hate when they change things!

If it was store bought it always was chocolate or Dutch chocolate….even those don’t taste the same anymore! I know its not me…its the product itself. I am not alone in thinking that they have changed in quality!

Strawberry Flaky

When I was a kid I I used to go home for lunch, but on some days I would stay and on those days I would find a little treat in my bag! It was a strawberry flakie! They were my favourite! I just loved them! My friends would wanna trade in with there snack…but I wouldn’t budge…no one was gonna take my flakie from me….it was all mine!

I would search the house to see where my mom would hide them…and when I found them I would sneak in the back room and stuff my face before anyone caught  me! Which was often since I was the only child…no one to tattle on me!

Sunshine Award

Wow! I have the honour and pleasure to have received not one but two Sunshine Awards! The first time around I was just so humbled by it and just over the roof excited….the second time around I was just as excited….you know they say good things come in twos!

Swiss Chard Burek

Swiss Chard Burek

This is my first time using swiss chard, I had planted it in my garden just because I liked the way it looked! I didn’t even know if I would like it! It is something that grows well and looks nice in your garden! I noticed that the leaves were huge and ready for picking so I got my garden crocks on and went in there and cut them! Brought them in and thought…now what? What to make with it was the question of the day!

I rinsed the dirt off and started to chop them up as I would with any other greens. Had some filo dough in the fridge and had all the other ingredients needed so I thought hey why not! Swiss chard burek! I took a bite of it first though to make sure it wasn’t bitter and it wasn’t at all! Its a ‘sweet’ green! In fact this burek had to be the best tasting burek I have ever tried! Next year I will be planting a whole lot more Swiss chard in my garden!

Oreo Cake

Oreo Cake

My kids love Oreo cookies! Me not a big fan I actually loved the fudge filled chocolate cookies from A&P when I was growing up! Oh my goodness I loved them so much so that if my grandpa would bring in a box they were gone in a 2 days! I would finish them up so fast!  Over the years those cookies have gone through a few changes…the names..packaging even the taste and quality! Don’t you just hate when they ruin a good thing?

Watermelon & Strawberry Lemonades

Its summer time! Summer drinks are here! I did not always like lemonade but I have grown to love it! I think as a kid I found it way to sour! I didn’t even like lemons in general and now I have to have lemons in my kitchen all the time! Isn’t if funny how our tastes buds change over the years!

Cold watermelon is the best on a hot summers day! What is even better is drinking it…cools you right off! Just ask my hubby…he was working real hard in the yard the other day and I surprised him with one of these drinks! The combination of lemon & watermelon is wonderful! If I had lime I would have added some as well….there is always next time!
