Homemade Mac and Cheese

I remember walking home for lunch and preparing my lunch everyday from grade 6 till grade 8  and most times it was that same old blue box of mac’ n’ cheese….I honestly couldn’t get enough of it! 2 teaspoons of butter and a bit of milk stirring in that powder cheese, oh ya I was all gourmet even then;)

I still could go for a box of that stuff every now and again…but I would much rather have it made with love & wholesome ingredients!

Soguk and Cheese Buns

Made these the other day with the same pogaca dough recipe, I made some with feta and parsley, and the rest I stuffed with soguk and Spanish cheese you can use mozzarella if that is what you have. I also made a dipping sauce for the kids with some diced tomatoes that I had left in the fridge. It was so simple to make and tasted great!

Peach Ice Cream
I had about 8 peaches left in the fridge and they were too soft, I don’t mind soft peaches but my kids don’t! I didn’t have enough to bake with, so my mom told me why not make ice cream with it! Glad I did, it turned out great! So easy to make too! I pureed the peaches in my mini food processor, left it a little chunky not too much but I wanted some texture in my ice cream, you can puree it to any texture you like.

Diamond Cut Baklava

Baklava is a delicious rich dessert that is very popular around the Mediterranean, every family and culture has their own traditional way of making it, my Grandmother from generations to generation in her family cut there’s in a star shape for the diamonds. For the syrup, I like mine simple without extra flavours or add ins.

My Grandfather was the master of baklava, everyone came to our house for Bajram not just to visit, but to get some baklava! Wish he could be here to taste mine, as I never got the chance to make it for him…every time I make it I think of him. My Grandmother says mine tastes just like hers, which makes me feel so good<3

Playing with my food again….I have been wanting to try the Rubik’s cube salad for a while now but I was intimidated as I am not good with chopping and cutting! I tried my best to make the cubes the same size and put it all together, I think I did ok for the first time. It is no where close to the perfect ones I have seen on the net…but for me its good!

With all these veggies growing in the garden all at once it is hard to catch up! I am always looking for new ideas to make use of these lovely gems! I tried a zucchini chocolate cake last month but it didn’t turn out that great, I didn’t use enough oil, it turned out dry and it was heavy! I looked around for an easy recipe to follow and I found one!

Nutella Fudgesicles

One of my favourite summer treats is chocolate fudgesicles! I was at the grocery store looking to buy some and noticed the first ingredient was ‘modified milk ingredients’ I placed it back in the freezer and thought I have to look up what that means exactly.

Well it turns out that modified milk ingredients doesn’t necessarily mean its made from milk, but  products that was initially part of milk, e.g. milk by-products! Why can’t things be simple? Well cause its cheaper to use by-products than cream and milk!

Who doesn’t like a crunchy dill pickle? I love them! Problem is some jar labels can be deceiving! I hate when that happens…you open a jar of pickles and they turn out soggy and flimsy! Crispy and crunchy is what I want…so you know the saying when you want something done do it yourself! I took those words and ran with it to the kitchen and made my own pickles!

Yogurt

My Grandfather made a pot of yogurt every week, he loved yogurt! He would eat it with everything….reminds me of my daughters! I don’t think I can go a day with out having some in the fridge! I like my Grandfather make a pot every week using the same pot he made his!

I like to make it with 3.25% milk, you can make it with any % milk you prefer. I use pyrex bowls with lids, for storage. You can use jars what ever you have.

Homemade yogurt is simple to make, but it can also be tricky! I have been making it for years and grew up watching my Grandpa making it so I have learned the tricks for a good yogurt base!

Potatoes with Herb Garlic Sauce

Its a 100 degrees outside and I am craving scalloped potatoes! What is a girl to do? Turn the oven on and actually bake in this heat….well I did turn the oven on a few days ago to make pizza…yes I was crazy that day! The problem is my house! Its hot in here even with the A/C on, cooking in my kitchen is like cooking in a sauna!

Since I was barbecuing the steaks I needed an easy side dish, I had made beans in the crock pot cause that is what my kids like…but I like potatoes with my meat! I had red skin organic potatoes that I put to boil and thought I would just eat it with some butter and salt as I like potatoes like that.
