We love our acorn squash! My mom always baked them with butter and brown sugar, I added the walnuts and cranberries, and my kids added the whipped cream;) Every generation has their own way of enjoying it:)
There really is no measuring for this, it all depends on how much butter and sugar you like with it!
Cut the squash in half, and add 1 tbsp unsalted butter and 1 tbsp of dark brown sugar and a dash of cinnamon or pumpkin pie spice in each half. I add a few spoons of water on the bottom of my roasting pan, cover and bake at 350 for one hour or until soft.
I like to add another tablespoon of brown sugar when it comes out of the oven, I then fill the cavity with dried cranberries and walnuts. You may top with whip cream if desired. Enjoy!:)
