These muffins are moist and delicious! The added Nutella makes them extra special. I make them with olive oil, Omega-3 organic milk, Omega-3 organic eggs, & walnuts. The potassium from the banana’s will give you energy, plus all that Omega will make you happy;) If you like you can add other nuts or flax seeds in the batter as well.
What you will need:
- 3 ripe bananas mashed
- 2 eggs
- 1 1/2 cups sugar
- 1/2 cup milk
- 1/2 cup olive oil
- 2 cups all purpose flour
- 1 1/2 tsp baking powder
- 1 tsp salt
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 cup coarsely grounded walnuts
- 3 tbsp Nutella
Mash banana’s (I add them whole in the mixer and mash with the beater), add in the milk, oil, eggs, and sugar, beat till blended.
Sift together in a bowl all the dry ingredients,( I use a whisk to do that). Pour the dry ingredients in the banana mixture, beat till combined. Fold in the walnuts. Drop three tablespoons of the Nutella and swirl into the batter.
Place the baking cups in the muffin pan, no need to grease. Pour in the batter with a ladle and bake in a 350 degree oven for 15-20 minutes, check with tooth pick. You can freeze the extra and pack them in your kids lunch! Enjoy!
