I usually make this when I really don’t know what else to make for dinner, or when I make pasta salad, it is simple and easy. I don’t add any sauce after it is grilled, I find it to have enough flavour from the marinade and grill.
You will need:
- 12 chicken drumsticks
- salt
- seasoning salt
- 2 cloves of garlic cut or mashed
- garlic salt
- Tex mex seasoning (optional)
- 2 tbsp vinegar
- 2-3 tbsp olive oil
- 1 tsp paprika
In a mixing bowl, add the chicken and splash some vinegar, olive oil and garlic over the chicken, season the chicken with the seasonings above, I just eye it, I would say 1/2 teaspoon maybe of the seasonings if I had to guess. If you like it spicy you can add some hot sauce or sriracha to the marinade.
If you really want to know what the seasoning will taste like, combine it all in a bowl with the vinegar, oil and garlic, taste and adjust as you like and then pour over the chicken.
Marinate for at least an hour, prepare your barbecue grill, and when it’s ready place the chicken on the grate, on lower to medium heat cook the chicken for about 30 to 35 minutes, flipping them around every 5 minutes or so, that way they don’t burn. Depends on your BBQ, cook until done and juices are clear, may take longer or less time, depends on how hot or quick your grill cooks, I don’t mind dry chicken as long as it’s fully cooked I’m good. That’s it super simple and delicious!
You can serve with your favourite BBQ sauce or enjoy as is.
