I came up with this trifle with the leftover cake that my daughter made, she had made a blue and white cake, so I used up what she didn’t need. It was quick, easy and so delicious…oh and may I add pretty too!
This would be perfect for a blue themed party, or any party really. She used a white cake mix for this, so it was light and spongy.
For the blue colouring we used Americolor royal blue, it is such a pretty colour. Of course adding the colour is optional.
You can divide the batter and colour one half of the batter, or all of the batter, or none of it, it’s up to you.
What you will need:
- 1 white cake mix
- fresh blueberries
- 1 box instant vanilla pudding
- 1 and 1/2 cups milk
- cool whip or whipping cream
- royal blue food colouring (optional)
Grease baking pans or pan and line with parchment, 9 inch pans will do, or 13 x 9 inch pan. Follow instructions for cake on box.
Colour batter with royal blue food colouring if using, a few drops will do.
Bake cake or cakes, and completely cool.
Prepare vanilla pudding with milk, and fold in cool whip, I would say a few big heaping spoonfuls would do.
Cut the cake into bit size pieces, add some pieces to the bottom of the trifle bowl. I layered the colours, starting with white and topping with blue.
Top with some pudding mix, spread it around and a couple spoons of cool whip and add some blueberries. Continue layering the ingredients, ending with cool whip on top with blueberries.
Refrigerate until ready to serve. Enjoy!
