This has become one of my favourite dishes, its full of flavour and is easy to make. You can add a little more oil if you find it dry, I cannot have a lot so I use very little when cooking.
What you will need:
- 375 gr whole wheat linguine or spaghetti
- bag of baby bok choy or one large one
- 8 oz pkg of mushrooms
- 1 tbsp grated ginger
- 1 tbsp grated ginger
- 1 green onion
- a few tbsp of soy sauce
- 1-2 tbsp of oil for cooking
Bring a pot of water to boil for the pasta, you may add salt to the water if you like.
Grate garlic and ginger, rinse and cut bok choy and mushrooms, and chop green onion.
In a pan add a little oil to cook the veggies, first cook the bok choy with mushrooms, then add the green onion, ginger and garlic. Cook till bok choy is tender and mushrooms have browned.
Add in a little pasta water to the veggies, and add in pasta when its done cooking.
Combine in pan and season with soy sauce, you can add black pepper if you can have it.
Adjust seasoning if need be before serving. Makes for a delicious vegetarian meal, enjoy!
Never had bok choy, and really curious about it. But I know the rest of the ingredients quite well and love them all. I’m sure it makes a perfect summer dish!
