After being sick and not able to eat real food, along with this cold weather…put me in the mood for some comfort food! I found that if I just made mac ‘n’ cheese it would not be satisfying as a meal, needed something more! I thought some ground beef would go great with it! I can’t believe I am admitting this, but once upon a time I loved Hamburger Helper! Yes me!

Growing up with a working mom, you learn how to cook at a young age, but you need some help….that is when that came in handy among other convenient food items! Beefy Noodles was my favourite! Truth is, if someone offered me a bowl right now, I probably wouldn’t say no to the offer, I mean its not a bad thing! Just wish the ingredient list wasn’t all so bad.

Imam bayildi literally means ‘the Imam fainted’ there are few folklore stories that are about this. The story I grew up with was when this man the Imam, first tried this dish he fainted as it was so good!

This is my daughters favourite dish, my husband loves it too. This time it was extra special as all the veggies used in this dish came from my garden! Including my homemade-tomato-sauce (I used 1 bag for this recipe). You can fry the eggplant, or bake them which ever you prefer.

Homemade Flat Bread Wraps

I like to call this lazy lakror! I’ll tell you why….Lakror is an Albanian style pizza that is made with many thin buttered layers of dough, takes a lot of effort and upper arm strength! My mom is a pro at it…..me not so much…I have made it a couple times but I prefer filo as that is straight out of the freezer!

I love the taste of meat filled lakror but too lazy to make it! This is like a soft taco with an Albanian twist! There is something similar to this in Turkish cuisine called lahmacun but the meat is spread on the bread and cooked or left raw, I do enjoy making it that way as well!   Both are delicious!

If you choose to spread the raw meat mixture on first, you can use store bought pita or homemade, cook meat side down on pan or grill or you can steam cook it, that is what I do, I don’t like raw meat.

Lamb Stew

 Lamb Stew

My sons dinner request tonight…lamb stew! The whole family loves this dish, especially when prepared this way…if you don’t have a cooking clay pot you can use a dutch pot, or something that is thick and heavy duty. You may also use a Crock pot, all you have to do is prepare it the same way, then add ingredients to the pot, add some water set it and leave it!:)

First I sauté the peppers and meat, too seal in the flavours then transfer to the oven.
