Orange Cranberry Cake

I wrote this post up a few weeks ago, I wasn’t happy with the photo’s that I took, made it a couple times since then but its been so gloomy out there, since it was a sunny day today and I had the ingredients I thought I should take advantage of the sun and try to get some good shots! The sun in my kitchen wasn’t so bright this afternoon, but I think they turned out okay, much better then the first time that is for sure!

Woke up early one Saturday morning, to surprise my family with these yummy and easy to make strawberry turnovers! I was able to make 8 turnovers with the 2 rolls that came in the pkg of puff pastry. Depending on what kind of puff pastry you buy, some just come in a big block and you must roll out yourself and others are pre-rolled. Acma-Turkish Bread

Acma- Turkish style bagel or soft rolled bread can be made savoury or sweet. Its a soft dough that is in a twist and rolled up in the shape of a bagel and baked. Its so good when freshly made and served at breakfast. You can add filling like olive paste or leave it plain or add other pastes if desired. I made mine mini, you can make them bigger and shape them like a bagel, mine closed up as I might them tighter, although some did turn out looking like a bagel. I made these yummy and good for you muffins over the weekend! As you may have notice a lot of my baking recipes ask for olive oil, I do not use extra virgin olive oil in my baking! I use regular olive oil so it does not have a strong taste or aroma to it…it is not uncommon to use olive oil in baked goods in Mediterranean cuisine, in fact it is the norm!

However if your not convinced, you may use any oil you wish.:)

I finally did it! I took the time to properly measure the ingredients and wrote it out for you all! We love cinnamon rolls! One of my earliest memories is my mom baking cinnamon rolls, she learned to make them as a kid in Sweden. She would add raisins and sometimes walnuts in the filling. Banana Nut Muffins with Nutella

These muffins are moist and delicious! The added Nutella makes them extra special. Soguk and Cheese Buns

Made these the other day with the same pogaca dough recipe, I made some with feta and parsley, and the rest I stuffed with soguk and Spanish cheese you can use mozzarella if that is what you have. I love my bread! My whole family does! Albanians are known for their love of bread and cheese! Buke me djathe  as we say! I even found a FB fan page called ‘like if you grew up with buke me djathe’! Well it had a longer title than that but you get the point!

Chocolate Glazed Donuts

This chocolate donut is for all you lovers of chocolate glazed donuts from Timmies! That is my favourite donut including the walnut glazed chocolate and toasted coconut! Ohh there’s an idea!

I made the batter with coffee for added flavour, you can’t tell or taste the coffee it just gives the chocolate a richer flavour. As this was my first time making it, I was adding the liquid 1 tbsp at a time till I got the right consistency it came to 9 tbsp, you may find that you may need an extra tbsp or not.

Baked donuts are only good the day they are baked, so do not make a day ahead! I recommend serving as soon as the glaze is hardened, as they tend to dry out fast if you have them out for too long. Continue reading “Chocolate Glazed Donuts” »
