I wrote this post up a few weeks ago, but I wasn’t happy with the photo’s that I took. I made it a couple times since then, but its been so gloomy outside. It was a sunny day today and I had the ingredients, so I thought I should take advantage of the sun and try to get some good shots! The sun in my kitchen wasn’t so bright this afternoon, but I think they turned out okay. It was much better than the first time, that is for sure!

I use regular olive oil so it does not have a strong taste or aroma to it…it is not uncommon to use olive oil in baked goods in Mediterranean cuisine, in fact it is the norm. 🙂

I made the batter with coffee for added flavour, you can’t tell or taste the coffee it just gives the chocolate a richer flavour. As this was my first time making it, I was adding the liquid 1 tbsp at a time until I got the right consistency it came to 9 tablespoons, you may find that you may need an extra tablespoon or not.
Baked doughnuts are only good the day they are baked, so do not make a day ahead, I recommend serving as soon as the glaze is hardened, as they tend to dry out fast if you have them out for too long….
