Quince Marmalade or Jam, Recel Ftoi in Albanian is my moms favourite! Growing up I called them dunja pronounced dunya, as my mom grew up in Macedonia, so that is what she always calls them…just recently I found out in Albanian they are called ftoi, for the jam I grew up and still call it marmalat which is how it is said in Albanian as well as recel. I wrote this post up a few weeks ago, I wasn’t happy with the photo’s that I took, made it a couple times since then but its been so gloomy out there, since it was a sunny day today and I had the ingredients I thought I should take advantage of the sun and try to get some good shots! The sun in my kitchen wasn’t so bright this afternoon, but I think they turned out okay, much better then the first time that is for sure!

Pumpkin bundt cake with cream cheese frosting…ahh need I say more? I didn’t think I would be ready for fall desserts yet…but I am! I am into pumpkin anything already! I feel like its too soon, its not even October yet….and I already made pumpkin pancakes, pumpkin lattes, pumpkin halva and now this cake! Oh well what can I say…I love pumpkins!

Surprised my family this past weekend with these scrumptious pumpkin cinnamon roll pancakes! I actually wanted to make cinnamon rolls, but just didn’t have to the time to wait for the dough to rise…so I made these instead. I used the same recipe for my regular pumpkin pancakes, just added the cinnamon swirl part to it, you can make them plain if you like.
For the icing I made it a bit runny so that it had the consistency of a syrup, you can make it thicker if you like…that is up to you! It was a hit with all, even my mom love them! I actually added the icing in the middle, and folded it up like a taco…I was so hungry and didn’t have the patience to cut into it;) It really was yummy!
I was worried that the sugar would stick to the bottom, but it didn’t! I think its because the pan was hot and I lightly greased it every time I made a pancake.
Out of all the traditional Albanian or Turkish desserts I have to say revani is my favourite! I guess you can say I go through my stages of favourites, but at this point its revani…I especially love when its moist and spongy! I have two other recipes posted on here, they are for the most part the same. This one has a lemony flavour to it where as the other I add coconut and I use organic corn meal.
