No Bake Brownies

No Bake Brownies

I was inspired to make these no bake brownies because I am in need of boosting up my iron levels, and needed a fun way to do it! I basically took the idea from my walnut-date-balls and turned them into brownies.

I wanted a frosting to go with it, and I have heard of banana frosting and avocado frosting, so I experimented with both and found that I like the avocado more than the banana. I found that I wasn’t able to mask or hide the banana flavour, whereas I was able to mask the avocado. You can try it out yourself and see which you like best.

Slow Cooker Rice Pudding- Albanian Rice Pudding

Albanian Rice Pudding-Slow Cooker Rice Pudding

I learned how to make rice pudding from my Albanian grandmother, I wrote a post about it a few years ago, this time I made it in the slow cooker! I had to make it in the slow cooker three times till I got it perfect! The first time it thickened up too much, too much rice not enough milk, the second time it did not thicken enough, too little rice and too much milk, I had to add some rice flour to thicken it up near the end, the third times the charm, turned out  perfect!

I usually make rice pudding when my milk is near the due date or on the date, its a great way to use all that milk up before it gets bad!  Continue reading “Slow Cooker Rice Pudding- Albanian Rice Pudding” »

Quince Marmalade – Recel Ftoi

Quince Marmalade

Quince Marmalade or Jam, Recel Ftoi in Albanian is my moms favourite! Growing up I called them dunja pronounced dunya, as my mom grew up in Macedonia, so that is what she always calls them…just recently I found out in Albanian they are called ftoi, for the jam I grew up and still call it marmalat which is how it is said in Albanian as well as recel. Quince are delightful smelling fruit that are not edible raw, but they do make tasty jams and fillings for cookies or pies.  Continue reading “Quince Marmalade – Recel Ftoi” »

Pumpkin Cinnamon Roll Pancakes

Pumpkin Cinnamon Roll Pancakes

Surprised my family this past weekend with these scrumptious pumpkin cinnamon roll pancakes! I actually wanted to make cinnamon rolls, but just didn’t have to the time to wait for the dough to rise…so I made these instead. I used the same recipe for my regular pumpkin pancakes, just added the cinnamon swirl part to it, you can make them plain if you like.

For the icing I made it a bit runny so that it had the consistency of a syrup, you can make it thicker if you like…that is up to you! It was a hit with all, even my mom love them! I actually added the icing in the middle, and folded it up like a taco…I was so hungry and didn’t have the patience to cut into it;) It really was yummy!

I was worried that the sugar would stick to the bottom, but it didn’t! I think  its because the pan was hot and I lightly greased it every time I made a pancake.
