Sucuk pide is a popular Turkish style pizza. It’s so soft and yummy, makes for a great picnic snack, lunch, or brunch idea when you make them mini like these ones.
What you will need:
- 1 cup cold milk
- 1 cup hot water
- 2 tsp sugar
- 4 cups and 1/2 cups flour
- 1/2 cup oil
- 2 tsp yeast
- 1/2 tsp salt
Boil water, and combine with milk, that will give you the perfect temperature to add the yeast and sugar in. Combine the hot water and milk, stir in the yeast and sugar, allow it to foam. Add flour, oil and salt and knead to form dough, drizzle with oil while kneading to prevent from sticking, cover and let rise. (takes about 40 mins to 1 hour)

For filling:
- mozzarella cheese or spanish cheese
- Turkish sucuk (Turkish sausage sujuk)
- 1 egg whisked
Separate dough in parts, add to greased baking pan that is lined with parchment (so that it doesn’t stick to pan), flatten balls into oval shapes and add a slice or slices of cheese, and add 3-4 pieces of sujuk, fold dough over edges and pinch ends. Spread the egg yolk on top of dough with pastry brush. Bake at 400 until golden. You may broil for a minute for a nice golden colour if desired.
Will make approximately 16-18 mini pides.
