Chicken with Red Peppers

This dish is tasty, easy and fast to make! You can serve it with pasta such as orzo or rice! 

What you will need:

  • 4  boneless chicken breast cut into half (makes 7-8 pieces)
  • 3 red peppers
  • 2 tsp Montreal chicken spice
  • 1 tsp paprika
  • 1/2 tsp garlic salt
  • butter or olive oil (for chicken)
  • olive oil (for peppers)

Clean and cut peppers, then in a pan heat 4-5 tablespoons of olive oil, add peppers and cook till tender and crispy on edges, season with salt; remove from pan.

In the same pan add 2 tsp butter and a little olive oil if need be, cook chicken breast on both sides till fully cooked. Cover the pan with lid it keeps the moisture in, cook on medium heat. Season with the seasonings above.

Place the peppers on a serving dish and plate the chicken on top…serve with rice or plain pasta such as baby shells or orzo, or you can have it on its own, with a  fresh loaf of bread and salad.
