This time of the year reminds me of these soft chocolate macaroons, my aunt would make them every time around December, they were one of my favourite treats as a kid! This is the recipe that she shared with me, and now I make them for my kids:)
What you will need:
- 3/4 cup evaporated milk
- 1/3 cup sugar
- 3 cups semi sweet chocolate chips
- 1 1/2 cups coconut
- 1 1/2 cups quick oats
- 1/2 cup ground walnuts (optional)
Heat milk in sauce pot till warm on low heat with sugar, cook till sugar completly dissovles constantly stir. Remove from heat, add chocolate chips . Stir well with wooden spoon or spatula till melted. Pour in the other ingredients, mix till well blended.
Line 2 cookie sheets with wax paper drop spoonfuls of the mixture on the sheets. Place in fridge for 30 mins till firm.
Keep refrigerated until ready to serve. You can store the extra in the freezer:)
