My Aunt Angela used to make this for us when we were kids, I loved it! It’s so simple to make, you can make it with coloured or white mini marshmallows. I like to add nuts to the chocolate for added texture and crunch, of course that is optional.
What you will need:
- 2 cups semi sweet chocolate chips
- 1 bag of colourful marshmallows
- 1/2 cup margarine or butter
- 1 1/2 cup sweetened coconut
- 1/2 cup ground walnuts (optional)
In a large microwavable safe bowl, melt chocolate chips and margarine for 1 minute, stir and if its not fully melted return to microwave for another 10 seconds, stir until smooth, cool for 5 mins.
Add marshmallows to the chocolate and mix in.
Lay a piece of wax paper on the counter, spread the coconut straight across and spoon over the chocolate marshmallow mixture making a long log. Roll along with the wax paper up to shape the log and the coconut to cover.
Cool in fridge for 3-4 hours till firm. Cut into pieces before serving. Store in fridge.
