White Chocolate Cranberry & Pistachio Cookies

OK there is a new cookie in town and its yummilicious! First off the added pistachios just happened by chance, I had intended to add walnuts or pecans, I forgot that I finished all the walnuts when I made baklava last week, I couldn’t find the pecans….I keep all the nuts in the freezer…they were no where to find!

 

Where did they disappear too? Watch me find them today…it always happens! Well to my luck I did find some ground pistachios from the baklava in the freezer, so I thought ya that will work…and it did, I wish I had some whole so that I can chop some up for texture, they were all grounded…always next time:)

The grocery store that I went to didn’t have any white chocolate chips, all they had was bakers chocolate so I chopped that up and it worked fine. You can use either.

What you will need:

  • 2 and 1/4  cups all purpose flour
  • 2 tsp baking soda
  • 2 eggs
  • 3/4 cup brown sugar
  • 3/4 cup sugar
  • 1 cup softened unsalted butter
  • 1 tsp vanilla
  • 1 cup dried cranberries
  • 1 pkg Bakers white chocolate
  • 1/2 cup ground pistachios ( you can chop them or leave whole)

Chop the white chocolate, set aside.

Cream softened butter with sugars till light and creamy. Add in eggs and vanilla. Combine the flour and baking soda and add into the butter mixture blending till well combined.

Fold in the cranberries, white chocolate and pistachios, till well blended.

Drop by spoonfuls onto parchment lined baking sheet, bake at 375 for 10 to 12 minutes. Cool on cookie sheet for a few minutes. Enjoy:)
