Eggplant is great when grilled, paired with garlic yogurt sauce and you won’t be able to put your fork down! You can use grilled eggplant, roasted or pan fried….all work and taste great! You can have this as a side dish, or as lunch on its own with bread.
What you will need:
- 1-2 medium size eggplants
- 1 cup plain thick yogurt such as Balkan Yogurt
- 2-3 cloves of garlic
- salt to season
- olive oil
Slice eggplant into thin slices, you may pan fry, bake or grill eggplant. If baking or grilling, drizzle them with olive oil and season with salt. If pan frying them make sure the oil is hot so that it cooks fast and does not soak too much oil.
Grate garlic and mix with yogurt, season with salt.
Spoon the yogurt over the grilled or fried eggplant. Drizzle with olive oil and sprinkle with paprika. Enjoy!
