Green Beans with Olive Oil – Zeytinyagı Taze Fasulye in Turkish, is a simple and tasty one pot vegetarian dish. You can serve with rice on the side and plain yogurt, or add freshly grated garlic to the yogurt and season with salt; that goes really nice with this dish.
What you will need:
- fresh green beans (flat or regular is fine)
- 1 tsp red pepper paste*
- 1 tsp tomato paste
- 1 tomato
- 1-2 cloves of garlic
- 1 onion (red or white)
- salt and pepper
- 1/2 tsp cumin
- extra virgin olive oil
Rinse and clean the beans. Cut tips and discard, cut the beans up in a lot of pieces or in half or in 3 parts, depends how you like it. Add to a pot along with a diced onion, diced tomato, minced garlic, red pepper paste, tomato paste, salt, pepper and cumin and enough water to cover the beans. Add a generous amount of good quality extra virgin olive oil.
Cover and bring to a boil on medium heat, then lower to low heat. Continue to cook until beans are soft, could take about an hour.
*If you don’t have red pepper paste, you can use more tomato paste.
