I remember walking home for lunch and preparing my lunch everyday from grade 6 till grade 8 and most times it was that same old blue box of mac’ n’ cheese….I honestly couldn’t get enough of it! 2 teaspoons of butter and a bit of milk stirring in that powder cheese, oh ya I was all gourmet even then;)
I still could go for a box of that stuff every now and again…but I would much rather have it made with love & wholesome ingredients!
Shopping has become rather a new experience for me, reading labels and ingredients trying to eat healthier, found it interesting that some cheeses are made from modified milk ingredients rather than just milk! Well to my luck I did find a cheese that is made with 100% Canadian dairy and its first ingredient is…milk! Yay! No modified anything in the list!
Taste great too, just like the cheddar cheese I grew up with! That could be because its the same cheese my Grandfather used to get…Pine River cheese! I could swear they had an outlet store here in town when I was a kid!
I really just threw everything in the pot hoping it would turn out, and it did turn out in fact its the best tasting homemade mac and cheese I have tried.
I will try my best to write out the measurements, as I did not measure anything, so bare with me!
Ok so Pine River cheese is no longer available in town, but I did find a good quality cheese at Costco! Balderson Extra Old Cheddar Cheese, its so good! Another thing is after making it a few times, I found my kids prefer it unbaked! Its more creamy that way. I am trying it out with shells tonight!
Ok so what you will need in approx measurements:
- 3 tbsp salted butter
- 3 heaping kitchen tablespoon flour
- 2 cups 2% milk
- salt to taste
- 2 cups grated Pine River Old Cheddar Cheese ( I cut off about 3 inches of a 500 g block of cheese)
- 1/2 tsp mustard or a bit more I just squeezed it in
- 400 gr bag of elbow macaroni boiled
- 3-4 tbsp bread crumbs or Panko
Melt butter in sauce pan, whisk in flour and quickly whisk in milk, stir constantly till thickened cooking on medium heat, add in the mustard and cheddar cheese, season with salt remove from heat, add more milk if needed. Add in the boiled and drained macaroni, combine and transfer to buttered baking dish, sprinkle with bread crumbs or Panko crumbs if desired. Bake at 350 for about 10 -15 minutes, broil for a minute or two so the crumbs brown. Enjoy!
