Lamb Stew

My sons dinner request tonight…lamb stew! The whole family loves this dish, especially when prepared this way…if you don’t have a cooking clay pot you can use a dutch pot, or something that is thick and heavy duty. You may also use a Crock pot, all you have to do is prepare it the same way, then add ingredients to the pot, add some water set it and leave it!:)

First I sauté the peppers and meat, too seal in the flavours then transfer to the oven.

Lamb Stew

What you will need:

  • 1 shallot or onion
  • 1 cubanelle pepper
  • 1 red bell pepper
  • 3 lbs lamb shoulder cut into small pieces
  • 2-3 whole garlic cloves peeled and  smashed

Seasoning’s:

  • Paprika
  • Seasoning salt
  • Garlic salt
  • 2 Bay leaves
  • 1 tbsp Greek seasoning by ClubHouse

In a large pan sauté the chopped onions, chopped peppers  and garlic, add the meat brown on both sides. Season with the seasoning’s mentioned above. Transfer to baking pot, cover with 3 cups water. Bake uncovered at 350 for 3-4 hours till meat is tender and falling off the bone. Serve with rice and salad. Enjoy!
