Nothing tastes better than homemade….that includes homemade ice cream! Making homemade ice cream takes time and preparation! Note to self: Plan ahead! 🙂
One of the issues I am having is the ingredient that I am trying to avoid….. its in all the creams! Carrageenan, is found in creams, ice creams, frozen yogurt and well you get the point.
I had to come up with a recipe that would work….texture wise, as I was becoming discouraged  after a couple failed attempts! Finally it struck me, gelatin!  The gelatin will help form the ice cream and thicken it!  I was so incredibly happy that my experiment worked out and tasted great too!
What you will need to make mango frozen yogurt:
- 1 and a 1/2 ripe mango
- 1 cup sugar*
- 4 cups 3.25% plain yogurt
- 3 tbsp mango flavoured gelatin
Prepare ice cream bowl, by freezing for 24 hours ahead, needs to be fully frozen.
Take yogurt and place in a cheesecloth or strainer and let strain till liquid drains, takes 2 hours.
Peel mango and cut up, add to food processor and puree.
In a mixing bowl, mix the thickened yogurt, mango puree, sugar and gelatin and stir till blended, takes about a minute.
Refrigerate for 1-2 hours.
Add mixture to ice cream maker, takes 20 mins to thicken. Pour into a container and freeze for at least an hour before serving. Enjoy 🙂
*You can start with less sugar and taste and adjust to liking
