This is a simple and fast dish perfect for lunch or a side dish for dinner.
My grandmother and mom always make this, either with zucchini or spinach, I personally prefer with zucchini but I had spinach in the fridge today, so I thought I would finish it off.
You can make it with any pasta you have, I happen to have shells so that’s what I used today.
What you will need:
- 5 cloves of garlic crushed
- olive oil
- 2 tbsp salted butter*
- red pepper flakes
- salt
If your using zucchini you will need 1 medium size zucchini, just cut it up in bite size pieces
If your using spinach I would say about 4 cups worth
1/2 bag of pasta of your choice
Parmesan or Romano cheese
Bring to boil a pot of salted water, add pasta and cook till desired texture, some like pasta el dente and some a bit softer (like me) .
Meanwhile in pan add some olive oil and 1 tsp butter , cook garlic and pepper corns till garlic is fragrant.
Add the spinach and cook till wilted.
Drain pasta add the spinach/garlic to it drizzle some olive oil and add 1 tsp butter to pasta.
Garnish with freshly grated Parmesan or Romano cheese.
* You don’t have to use butter, you may only use olive oil, I just find butter gives so much more flavour.
