This dish is one of my sons favourites, since he was a little boy! It’s an easy dish to make using one pot, served with plain rice it makes a delicious meal. I usually make dishes like this in the late fall and winter, it just a comforting food that warms you right up!
What you will need:
- 1 lb ground beef
- 1 cubanelle pepper
- 1 medium onion
- 1 tomato
- 2 tbsp red pepper paste (sweet)
- 1 tbsp tomato paste
- 3-4 medium sized potatoes
- boiling water
- salt and pepper
- olive oil
Peel and slice potatoes, set aside in a bowl with cold water until ready to cook.
Dice onions and pepper, saute till soft with some olive oil (do not brown) season with salt and pepper. Add in tomato paste and pepper paste stir, add in diced tomato. Add in ground beef, mash and crumble till meat is mostly browned.
Lay potatoes over the top of the meat mixture. Pour over the boiling water, enough to cover the potatoes, season with salt and pepper. Cover partly and cook on low heat till potatoes are cooked. You may stir it occasionally to make sure meat is not sticking to the bottom of the pan, if you find you have too much liquid, you may cook uncovered for the remaining time.
Serve with rice if desired. Enjoy! Afiyet olsun!
