Pizza Pockets

This is a great way for the kids to enjoy pizza at school! My kids don’t like when I send them pizza as the cheese gets stuck to the foil and the toppings fall off….this is the perfect solution for that problem! Sorry I don’t have better pictures to share, made these in the early morning, had to get lunch ready and off to school;)

You can make the dough ahead of time as I did, I made it last night and left it in the fridge.

You can fill it with all the toppings you would for a pizza!:)

For filling:

  • Mozzarella cheese
  • Any pizza topping of your choice
  • Pizza sauce
  • Egg yolk for the top of pizza pocket

What you will need for dough:

  • 5 cups flour
  • 2 cups warm water
  • 2 and 1/4 tsp yeast
  • 1 tsp sugar
  • 1/3 cup olive oil to mix in while making dough (approx I don’t really measure)

Take yeast, sugar and mix in with the water in a large bowl, add the flour and start forming into dough. Knead and drizzle in the olive oil until its firm yet soft takes a few minutes. I use my Kitchen Aid mixer with dough hook attachment for this.

Transfer dough to a greased bowl, cover with cling wrap and a tea or kitchen towel, till doubles in size, punch air out of dough.

Pull a hand full of dough and roll out on a floured surface to make a circle. Spread pizza sauce and top with cheese and toppings, fold over and press edges down with your fingers.

Brush top with egg yolk, bake at 475 on a greased pan that is lined with parchment paper, till golden brown. Remove from pan onto cutting board or plate to cool. Enjoy:)

This one was filled with mushrooms, my daughter Dina and I love mushroom pizza:)
