A delicious potato salad with a crunch from the green beans, it is one of my favourites! I don’t specify the amount of green beans you need, you can add as much as you like. I love green beans so I add a lot.
What you will need:
- 5 medium size potatoes
- fresh green beans
- 1 tomato diced (optional)
- 1 chopped red pepper
- 3 pickles
- 1/2 red onion
- fresh parsley
- 1-2 green onion chopped
- extra virgin olive oil
- vinegar and or lemon juice
- salt to season
Boil potatoes, cook until fork or knife goes through them, takes 45- 55 minutes. Drain, and completely cool.
While potatoes are boiling, prepare green beans. Cut ends and cut in half, bring to boil; drain.
Chop and dice the other veggies.
When potatoes are cool enough to peel and cut, combine with veggies. Season with olive oil, vinegar, lemon juice and salt.
Taste and adjust seasoning. Enjoy!
