Its a 100 degrees outside and I am craving scalloped potatoes! What is a girl to do? Turn the oven on and actually bake in this heat….well I did turn the oven on a few days ago to make pizza…yes I was crazy that day! The problem is my house! Its hot in here even with the A/C on, cooking in my kitchen is like cooking in a sauna!
Since I was barbecuing the steaks I needed an easy side dish, I had made beans in the crock pot cause that is what my kids like…but I like potatoes with my meat! I had red skin organic potatoes that I put to boil and thought I would just eat it with some butter and salt as I like potatoes like that.
Then I decided since I have all these fresh herbs in my backyard, I should make use of them and add it to the butter…I did one better…I made a sauce with it!
I didn’t really measure anything, I was putting everything in there until it turned out! Such an Albanian thing to do….;)
Since I don’t use my coffee grinder for coffee anymore, I do make some use of it…I grind my herbs! It is the best thing to get them as finely chopped as possible! I also added the cloves of garlic in there! I don’t suggest grinding coffee in there after that haha!
What you will need in approx measurements:
- 6 potatoes
- Few oregano leaves
- Few springs of parsley
- 2-3 chives
- 2 cloves of garlic
- 1-1/2 tbsp butter
- 1 tbsp flour
- 1 cup 1/2 & 1/2 cream or whole milk
Boil the potatoes in salted water, drain and slice potatoes when cool enough to touch. I added them to a BBQ tray and barbecued them for 5-10 mins to reheat and get a nice flavour and grill mark on them. You can skip that part, my kids don’t like the taste of boiled potatoes…so I made the extra effort and it was well worth it!
Take your herbs and finely chop them along with the garlic. Melt butter in a sauce pan and add in the herbs/garlic. Add in the flour and whisk in together, stir in the milk or cream quickly. I didn’t really measure this part I just poured until it became the right consistency.
Season with salt and pepper. Cook on low whisking till thickens takes a couple of minutes.
Pour oven hot potatoes and enjoy!
