This is a traditional Albanian rice pudding, its my grandmothers recipe and its so good! The rice cooks with the milk which makes it even better in my opinion, if you like you may add raisins to it or leave as is.
What you will need:
- 2 and hallf liters of 3.25% or 2 % milk
- 1/2 cup short grain rice like jasmine or calrose
- 1 cup sugar or to liking
- 1/2 cup raisins (optional)
In a large pot add milk and cover with lid part way simmer on low heat till hot, add rice and continue to simmer on low heat, takes 4-5 hours of cooking time till rice cooks and milk has thickened.
Add sugar to rice pudding, taste and adjust if you want it more sweet.
Remove from heat. Serve warm or cold.
