My son loves salad and bulgur, so when I have extra bulgur left I like to add it to the salad! It makes for a great lunch or snack food!
I bought this mix of quinoa with bulgar and tried it with it, it was great! First time trying quinoa and it won’t be my last!
What you will need:
- 1/2 cup bulgur
- 1 cup and 1/2 boiling water
- 1 head romaine lettuce
- 1 tomato
- 1 bunch of fresh parsley
- 1 small seedless cucumber
- Tbsp of freshly chopped mint (optional)
- Lemon juice, olive oil and sea salt for seasoning
In a medium size bowl, place bulgur and pour over hot boiling water, cover and let sit for 10 mins or until doubled and soft.
Drain extra water if need be.
Chop cucumber and tomato and lettuce is small pieces.
Take parsley and blend in a mini blender to chop. If you dont have one, you can chop by hand with knife.
Add all ingredients together in large bowl, add olive oil, lemon juice and salt to season the salad, combine.
If your not eating it right away, store it fridge.
