This is my Grandfathers (gjyshi in Albanian) way of making salad, when ever I make it I get transported back to that big old house, sitting at the huge cherry wood dining table with that patterned vinyl table cloth in the dining room with my grandparents. In the summer he would use the veggies from the garden except for the lettuce as he never grew them in the garden. It was always so good, the oregano and feta makes this salad extra special! My grandfather loved oregano, used it in a lot of his recipes.
Keeping with tradition I pick my fresh oregano and dry it, store it for the rest of the year…so much better than the dry oregano from the grocery store. My grandfather used iceberg lettuce for this, however you can use any lettuce you like, I like to combine it with romaine at times. A secret my grandparents taught me about making a tasty salad is to combine it with your hands not spoons, it really does make a difference, try it yourself!:)
What you will need:
- 1 head lettuce
- 2 beefsteak tomatoes
- 2 -3 curly or Persian cucumbers (1 English cucumber is fine)
- 1 green bell pepper
- 1/4 red onion
- handful of feta cheese
- 1 tsp dry oregano
- olive oil
- vinegar
Rinse all veggies and cut tomatoes in large pieces, julienne cut the pepper and onion, cut up lettuce and cucumber. Pour 4-5 tbsp of olive oil and 1-2 tbsp of vinegar season with salt and oregano in a cup and pour over salad, combine with your hands, add in feta cheese and adjust seasonings. Serve right away, enjoy!
