Made these the other day with the same pogaca dough recipe, I made some with feta and parsley, and the rest I stuffed with soguk and Spanish cheese you can use mozzarella if that is what you have. I also made a dipping sauce for the kids with some diced tomatoes that I had left in the fridge. It was so simple to make and tasted great!
What you will need:
- 1/2 cup yogurt
- 1/2 cup warm milk
- 1/2 cup olive oil
- 1 egg
- 3 cups of flour
- 1 and 1/2 tsp yeast
- 1 tsp sugar
- 1/2 tsp salt
- Soguk or sausage
- Cheese
- 2 egg whites
- Sesame seed
Dissolve sugar in warm milk, add yeast, let foam rise takes about 3 minutes. Add the yogurt, olive oil and egg to the yeast mixture. Whisk together till blended. Pour in the flour with salt and start to knead till forms soft dough. Grease the bowl that the dough is in and cover with cling wrap and kitchen towel. The dough will be a bit cold because of the cold ingredients, what I do to warm it up and help it rise is; fill a pot with hot tap water and add the bowl with the dough in it, it will rise in about an hour.
Tear small amounts of dough at a time and roll to shape a circle, place a piece of soguk and a slice of cheese and fold over and pinch ends. Place on a greased baking sheet. Bake at 400 till golden brown takes about 10 -15 minutes.
For sauce:
- Small can of diced tomatoes
- Fresh basil
- 1 garlic clove
- 1 small shallot
- 1/2 tsp red peppers flakes
- Salt
Saute chopped onion and shallot and red pepper flakes in some olive oil, chop basil and add to the onion to release the oils, makes the sauce taste better, add in the diced tomatoes and simmer on low heat for 10 minutes, season with salt.
You may use fresh tomatoes for this as well, if you don’t have canned.
