My kids love falooda, this was my first time making it, and it turned out great! I made mine more like a pudding rather than a drink, next time I will make it as a drink, but I really enjoyed it like a pudding.
I used a ready made falooda mix for this; it was easy to make. It comes in two flavours, I used strawberry. The falooda mix comes with vermicelli noodles, almonds, pistachios, raisins, what looks like chia seeds but I believe they are basil seeds. So, you really don’t have to add anything to it!
*If you want it to turn out like a pudding, add the cornstarch. If you want it like a drink, omit the cornstarch.
Makes 4-5 servings depending size of dessert cups.
What you will need:
- 1- 195 gram box of strawberry falooda mix ( I used Laziza brand)
- 1 liter whole milk
- 1/2 cup water
- 1 and 1/2 tbsp cornstarch* (if making pudding)
- 1 pkg strawberry flavoured jelly
- 1 cup hot boiling water
- 1 cup cold water
- vanilla or strawberry ice cream
- coarsely ground almonds and pistachios
Prepare strawberry jelly according to package. Transfer to a 8 x 8 pan. Refrigerate until set; takes about an hour. Cut into small squares.
To prepare the the falooda, pour the milk into a large pot, bring the milk to heat and quickly whisk in the falooda mix. Bring to a boil on medium heat for 15 minutes of cooking time, stirring occasionally.
Near the end, if you are adding the cornstarch, combine the cornstarch with a splash of cream in a small bowl and quickly whisk in the pot; falooda will thicken as it cooks for a minute or so. Remove from heat.
Allow to cool for 30 to 45 minutes. Add some jelly squares in dessert cups, then pour the falooda mixture, layer again with the jelly and then once again with the falooda. Refrigerate until cold; jelly sets once again as it does get a little watery from the warmth of the falooda.
Top with ice cream, garnish with almonds or pistachios, and a drizzle of strawberry syrup or rooh afza if desired.
