Strawberry Flaky

When I was a kid I I used to go home for lunch, but on some days I would stay and on those days I would find a little treat in my bag! It was a strawberry flakie! They were my favourite! I just loved them! My friends would wanna trade in with there snack…but I wouldn’t budge…no one was gonna take my flakie from me….it was all mine!

I would search the house to see where my mom would hide them…and when I found them I would sneak in the back room and stuff my face before anyone caught  me! Which was often since I was the only child…no one to tattle on me!  

There is something about a soft flaky crust, strawberry filling and whipped cream that just makes you happy! For me its a bit nostalgia  and now watching my own kids stuffing there faces with it!

Its kinda like a strawberry shortcake…but because its made with puff pastry it just melts in your mouth! Once you try these out you will see why I like them so much!

You can make this really easy on yourself by using store bought puff pastry!

 

What you will need:

  • 1 thawed sheet of puff pastry
  • 2 cups whipped cream (approx)
  •  strawberries
  • 2-3 tbsp strawberry jam
  • 1 cup icing sugar
  • 2 spoons of hot water*

Unroll the puff pastry and bake on a baking sheet with the parchment that it came in, at 400 till puffy and golden. Takes 15 to 20 minutes. Remove from pan and cool.

Slice strawberries in half and whip the whipping cream. Cut the puff pastry in half, spread strawberry jam on the inside part of the top part of the pastry, on the bottom spoon over the whipped cream and add the sliced strawberries on top, cover with  the other half of the puff pastry(with the jam). Make glaze with icing sugar and water, stir till becomes smooth and shiny. Pour over the top part of pasty and spread with spatula. Cut into 10 pieces. Enjoy!
