Sharing some recent cakes that I made, of course just for inspiration! Two of them were chocolate cakes with chocolate buttercream and one was vanilla with whipped cream combined with a little buttercream just for some texture.
These are simple cakes to make and decorate but look wonderful! The great thing about adding wafers or sprinkles on the edges of your cake is if your not good at icing…no one will know! You can be horrible at icing a cake but it will be all covered up with sprinkles or wafers, of course you would have to keep the wafers long if that is the case;) Tie it with some ribbon and it looks fantastic! Topping with strawberries or other fruit is wonderful as well, love cakes with fruit toppings.
This is a cake I make with mocha wafers, got them at Costco, you can break them up or cut them to be neat and add them around the cake, you can leave gaps are put them close together. Make sure do this soon after you ice as you need them to stick to the frosting. Tie with a ribbon or bow to help keep them in place.
This is a vanilla cake that I made, I filled the middle with buttercream and strawberry-freezer-jam. For the icing part I combined some whipping cream with a bit of buttercream. I held the cake ( cake was on a cake board) with one hand and added the sprinkles with the other, again do this as soon as you ice the cake so that the sprinkles stick to the icing. Pat dry the strawberries before you add them, if not the water will make the colours bleed.
This last cake, I used ground pistachios as a garnish and left the side bare. Just added some strawberries around, I did add more strawberries to the top of this cake compared to the other chocolate cake. Its a bit more simpler which of course depends on the occasion and who and why your baking the cake for. I did cut the middle strawberry to resemble a rose, simply slice four edges down gently of course and with a small but sharp knife, then slightly bend with your finger, simple to do, and looks amazing!
