Sweet Potato Casserole

We love sweet potato casseroles, and pies! I find that many recipes out there are just too sweet! Its probably why I never use to care for sweet potato casseroles, until I started to make my own!

Sweet potatoes are already sweet, so I just use 1/2 cup brown sugar for the filling, if you happen to love ‘sweet’ sweet potato casserole by all means add more sugar, this amount is enough for us!:)

What you will need:

  • 3 medium sweet potatoes
  • 1/2 cup dark brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup evaporated milk
  • 4 tbsp melted unsalted butter
Topping:

  • 1/2 cup brown sugar
  • 1/3 cup flour
  • 1/3 cup butter
  • 1 cup chopped or whole pecans

Boil potatoes unpeeled or peeled (what ever your preference) if unpeeled, peel when cool to touch. Cook till potatoes are tender, check by poking with a knife. Then mash potatoes with beater in mixer or mash with potato masher.

Combine mashed potatoes, eggs, sugar, evaporated milk and vanilla till mixed well. Pour into a buttered 8 or 9 inch pie pan or 2 qt casserole dish.
Combine the brown sugar, butter, and flour to make the topping, mix in with the pecans and sprinkle over top. Bake at 350° for 30 to 40 minutes, until hot and browned on top.
