In need of a healthy and refreshing summer dessert? Look no further, here it is…watermelon cake! I have been seeing this watermelon cake being shared on Pinterest for a while now, and thought what a cool idea! Woke up early one Saturday morning, to surprise my family with these yummy and easy to make strawberry turnovers! I was able to make 8 turnovers with the 2 rolls that came in the pkg of puff pastry. Depending on what kind of puff pastry you buy, some just come in a big block and you must roll out yourself and others are pre-rolled. I used the pre-rolled out ones. The end of the strawberry season is here! Its a short season and I try to make the best of it! This year I found a new love for strawberry and rhubarb! I really love the combination of the two, its a bit sweet and a bit tart! Rhubarb is really sour so you do need to use a lot of sugar to sweeten it up, the strawberries if sweet help with that!
I asked my kids how they wanted to use up the last of the strawberries and they said they wanted something baked! I made a strawberry rhubarb pie not to long ago so I wanted to try something else. I was split between a crisp and cobbler. I ended up making a cobbler, it turned out amazing! I used cornstarch for the filling instead of flour, it made for a nice glossy filling. I had about a cup worth of strawberries left from the season, I did make a cobbler last night with strawberries and rhubarb and what was left of the strawberries I decided to bake something instead of freezing the rest! I did get to make some freezer jam with the other quarts of strawberries and that is what I used in these swirls, that is why the jam is noticeably fresh and bright!
I had hoped to make these with ricotta but didn’t have any and was not leaving the house in this weather! I did have Philadelphia cream cheese and so I thought it work and I was right, it did work and tasted great! My mom and daughter Sara went crazy over them! My dad’s favourite pie is rhubarb pie! However he does not like strawberries mixed in with it! Well maybe after this pie he might just change his mind! I had 4 cups of cut of rhubarb, which I thought would be enough but the pan I used I guess was deep and it just didn’t look like enough filling….I had some strawberries and as much as my dad doesn’t like them….I had no choice! I sliced them strawberries up and mixed them in with the rhubarb!
