We love our hummus, and I love beets. I thought I should experiment with it and add some to the hummus. It’s so delicious! You can’t even tell there’s beets in it. I only had one large golden beet, if you have small ones I guess 2-3 would do. …

Lentil Soup
If you a regular reader of my blog you will know that I had gallbladder/stones issues this year, update I did end up having it removed in September. During the time before surgery (5 months) I had to change my diet, and that meant no or little fat, no red meat, no eggs, butter or sugar! Since then I am still on a red meat free diet, I have been trying to reintroduce it to my diet this past two weeks (in very small amounts) but it doesn’t agree with me. Not sure if it’s permanent or temporary….

Coconut Milk Fudge
I was invited to a vegan potluck this weekend and wanted to make a dessert along with a salad. I wanted to make some of my nobake-brownies, but then found out there was a recall on the almond butter.

Orzo with Veggies
This is just one of those dishes that is easy to make and tastes great! I use frozen organic broccoli for this as the fresh broccoli is too expensive, $5 for one bunch! Sometimes its $3.99 but even that costs too much for one small bunch of broccoli, the frozen is convenient as well, I can use how much I want and when ever I need it. You can use fresh if you have it. Another good thing about using frozen broccoli is you can grate it, and it will be hidden, the kids will never know!…

Tomato and Cucumber Salad
Tomato and cucumber salad is one of my favourite salads! Its easy to make, and is good for you! My kids love this with fresh bread just like I did when I was a kid…dipping the bread in the juices is the best part! I like to add feta cheese to it as well sometimes. It makes for a great side dish or on its own for lunch. …
Walnut Date Balls
We had guests over for dinner last night, and with all the preparations the only thing I had left to do was dessert! I made some chocolate ice cream the night before, was planning on some cake or something….but no time. I decided to make macaroons but didn’t have any oatmeal, and no time to go out and get any either. I took a glance over to the table and noticed the bowl of dates sitting there, then I remembered these stuffed dates I love so much….
