Cherry Zucchini Chocolate Cake

With all these veggies growing in the garden all at once it is hard to catch up! I am always looking for new ideas to make use of these lovely gems! I tried a zucchini chocolate cake last month but it didn’t turn out that great, I didn’t use enough oil, it turned out dry and it was heavy! I looked around for an easy recipe to follow and I found one!

Fried Zucchini with Honey

When I was a kid my Aunt Angela would make fried zucchini and my cousins and I would eat it with honey! It tasted great! I still love it with honey! I make it every summer with the zucchini from my garden, reason being is I love the ones that have grown to be really big, it makes nice large circles, you can’t find them in the grocery store! Plus homegrown veggies just taste so much better!

Dolma (Stuffed Peppers and Zucchini)

I made these dolma’s vegetarian, if you want you can add ground meat to it, add to the rice mixture either raw or cooked, (it will cook while baking)

Zucchini Soup

As I was checking through my garden I found that the zucchini were ready for picking! I snapped off 5 zucchini’s! Now what to do with all that zucchini? Well I had some things in mind and some new things to try out! This is a soup that even though its summer time and you don’t necessarily think soup… you do when its from fresh ingredients from the garden!

I have 3 sorts of mint in my garden, you can say I love my mint! The fresh mint makes this a summer soup! Its refreshing and delicious!
