We had our bayram celebration this week, we celebrated with family and friends with a turkey dinner! Surprisingly we didn’t end up with much leftovers, we did end up with some leftover turkey which I was happy about! The kids asked for turkey salad sandwiches for dinner, turned out great since I made soup earlier that day, it was a soup and sandwich kind of day.
I don’t measure anything when I make chicken, turkey, tuna or egg salads, I just taste and adjust as I go along.
What you will need:
- leftover turkey meat
- 2 tbsp mayonnaise
- 1 tsp old fashioned dijon mustard
- drizzle of olive oil
- salt
- 1 celery stick
- 1 green onion
- 1 tsp dried oregano
- splash of lemon juice
- dash of poultry seasoning
Cut the turkey into small chunks, combine with mayo, mustard, olive oil, salt, chopped green onion, chopped celery, oregano, lemon juice and poultry seasoning.
Taste and adjust seasoning, you may need more mayo or oil, taste and test before serving. Serve with fresh bread, enjoy!
