Turli Tava

Turli tava in Albanian and Turkish means a mixture of things cooking together in the same pot!  You can use any vegetable you have on hand! This is a simple recipe, anything goes! You can even make it with out meat, by just mixing a variety of vegetables and cooking them together, making a veggie like stew! This is also a perfect recipe for a crock pot dinner!  All you have to do is throw everything in at one time, just prepare in the morning, and dinner is done!
What you will need to make (as in photo):

  • 2lb stew meat
  • 1 red pepper julienne
  • 1 green pepper julienne
  • 3 garlic cloves cut in half
  • 1 onion chopped
  • 1 bunch of asparagus cut into 1 inch pieces
  • 3 potatoes cubed
  • Salt
  • Seasoning salt
  • Garlic salt
  • Paprika
  • Cumin
  • Olive oil
Other vegetables that I use for turli; eggplant, mushrooms, zucchini, and okra , cut zucchini and eggplant into bite size cubes if using.
I don’t really measure the seasonings, I just sprinkle them, combine and taste.
Mix all ingredients together and combine with some olive oil.  Check if you like seasoning may add more or other flavours, bake in pan covered at 350 for 1 and 1/2 – 2  hours till meat and potatoes are tender. Serve with rice and salad.
