I love the combination of cheese and veggie in this pide! Its even better with roasted red peppers! You can make it with a variety of veggies, sometimes I add mushrooms and olives to the mix! Any veggie will do, the more the merrier! You can also make this with store bought flat bread, I get mine from a Middle Eastern Bakery, they work out perfect on those rushed days, you can also use pizza dough.
For the dough:
- 1 cup warm milk
- 1 cup warm water
- 2 tsp sugar
- 4 cups and half flour
- 1/2 olive oil
- 2 tsp yeast
- 1/2 tsp salt
Mix milk, yeast and sugar. add flour start mixing in water and oil. Knead to form dough, drizzle with oil while kneading to prevent from sticking, cover and let rise. (takes about 40 mins to 1 hour)

For topping:
- 2 tomatoes
- 1 red pepper or roasted red pepper
- 1 green or cubenelle pepper
- 1 onion
- 1 tbsp olive oil
- salt to season
- mushrooms (optional)
- 1/2 tsp black pepper
- 1 tsp 7 spice
- 1/2 tsp sumac
- Spanish cheese or bocconcini cheese
Dice peppers, tomato, and onion in small chunks add seasonings and adjust to personal liking by adding more sumac, 7 spice, salt. The longer the veggies and seasonings marinate the tastier it is, I like to make this mixture the night before for best flavour. Drain liquid before using for pides, and adjust salt if need be before using it.
The seasonings are optional, you can use only salt and pepper if you desire, I sometimes just add salt.
Take dough by hand and pull apart into balls, the amount of dough will make about 4-8 pides (depending how big you make them). On a greased baking sheet or parchment lined baking sheet, spread out with hand to form a pide , use some olive oil on your hands so that it doesn’t stick, or you can roll it out on a floured surface.
Slice cheese or grate which ever you prefer.
For the pides, layer the cheese on the bottom, top with veggies, then fold over edges. Brush folded edges with egg wash.
If you are using the flat bread or shaping them as a pizza, just add the cheese to the bottom and top with the veggies.
Bake 2 or 3 pides at a time at 400 degrees till golden, takes about 20 minutes depending on your oven. Enjoy!
