Zucchini Bread

This is a moist and tasty zucchini bread! I like to make them in mini loafs and freeze the extra!
Got this recipe from Family Circle Magazine!
What you will need:
  • 3 eggs
  • 2 cups sugar
  • 1 cup oil
  • 8 oz softened cream cheese
  • 2 cups unbleached all purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp salt
  • 1/2 tsp nutmeg
  • 2 cups shredded zucchini
  • 1 cup chopped walnuts
  • 1/2 cup raisins

Grease two 9×5 inch loaf pans.

In a large bowl, beat eggs, sugar, oil and vanilla until smooth. Beat in cream cheese. In a large bowl, whisk dry ingredients, on low speed gradually add wet ingredients. Fold in walnuts and zucchini. Divide into greased and floured 9×5 loaf pan. Bake at 350 for 1 hour or till tooth pick comes out clean.
